Ingredients
  

Chicken Base
  • 4 boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
Balsamic Glaze
  • 0.5 cup balsamic vinegar
  • 2 tbsp honey
  • 3 cloves garlic minced
Toppings
  • 1 cup cherry tomatoes halved
  • 1.5 cups mozzarella cheese shredded
  • fresh basil leaves for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and grease a baking dish.
  2. Season chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  3. Sear chicken in olive oil until golden on both sides.
  4. Whisk balsamic vinegar, honey, and garlic to make glaze.
  5. Place chicken and cherry tomatoes in baking dish and pour glaze over.
  6. Bake for 20–25 minutes until chicken is cooked through.
  7. Top with mozzarella and bake 5–7 more minutes until melted.
  8. Garnish with fresh basil and serve warm.

Notes

Use high-quality balsamic vinegar for best flavor and avoid overbaking the chicken.
