Method
- Rinse barley under cold water and set aside.
- Heat olive oil in a saucepan over medium heat.
- Add onion and cook until soft, then stir in garlic.
- Add mushrooms and cook until golden and tender.
- Stir in barley, broth, thyme, salt, and pepper.
- Bring to a boil, reduce heat, cover, and simmer 35–40 minutes.
- Remove from heat, rest briefly, fluff, and serve.
Notes
Adjust seasoning before serving and garnish with fresh parsley if desired.
