Barley with Mushrooms

Ingredients
  

  • 1 cup pearl barley rinsed
  • 2 cups mushrooms sliced
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 3 cups vegetable broth
  • 1 tsp fresh thyme
  • salt to taste
  • black pepper to taste

Method
 

  1. Rinse barley under cold water and set aside.
  2. Heat olive oil in a saucepan over medium heat.
  3. Add onion and cook until soft, then stir in garlic.
  4. Add mushrooms and cook until golden and tender.
  5. Stir in barley, broth, thyme, salt, and pepper.
  6. Bring to a boil, reduce heat, cover, and simmer 35–40 minutes.
  7. Remove from heat, rest briefly, fluff, and serve.

Notes

Adjust seasoning before serving and garnish with fresh parsley if desired.
