- Preheat oven to 375°F (190°C).
- Season chicken with salt and pepper.
- Heat olive oil in skillet and sear chicken for 2–3 minutes per side.
- Place chicken in baking dish, top with pesto, mozzarella, and tomatoes.
- Bake uncovered for 25–30 minutes or until chicken reaches 165°F (74°C).
- Garnish with fresh basil before serving.
Notes
Best served fresh out of the oven. Store leftovers in airtight container for up to 3 days.
