Ingredients
  

Chicken Bake
  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup basil pesto
  • 8 oz fresh mozzarella sliced
  • 2 cups tomatoes cherry or Roma, halved
  • salt and pepper to taste
  • fresh basil leaves for garnish

Equipment

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Season chicken with salt and pepper.
  3. Heat olive oil in skillet and sear chicken for 2–3 minutes per side.
  4. Place chicken in baking dish, top with pesto, mozzarella, and tomatoes.
  5. Bake uncovered for 25–30 minutes or until chicken reaches 165°F (74°C).
  6. Garnish with fresh basil before serving.

Notes

Best served fresh out of the oven. Store leftovers in airtight container for up to 3 days.
