- Cook pasta in salted water until al dente. Drain and set aside.
- Combine shredded chicken and BBQ sauce in a bowl. Set aside.
- In a saucepan, melt butter. Whisk in flour and cook for 1 minute to make a roux.
- Gradually whisk in milk and cream until smooth and thickened.
- Add cheeses and stir until melted. Season with salt and pepper.
- Add cooked pasta and BBQ chicken to the cheese sauce and stir to combine.
- Optional: Transfer to a baking dish, top with extra cheese, and bake at 375°F (190°C) for 10–12 minutes.
- Garnish with parsley or green onions and drizzle extra BBQ sauce on top.
Notes
Use smoked cheddar for a deeper flavor or add crispy bacon for a smoky crunch.
