Ingredients
  

  • 2 cups elbow macaroni
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 0.5 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 2 oz cream cheese optional
  • 2 cups cooked shredded chicken
  • 0.5 cup BBQ sauce
  • Salt and pepper to taste
  • Chopped parsley or green onions for garnish

Method
 

  1. Cook pasta in salted water until al dente. Drain and set aside.
  2. Combine shredded chicken and BBQ sauce in a bowl. Set aside.
  3. In a saucepan, melt butter. Whisk in flour and cook for 1 minute to make a roux.
  4. Gradually whisk in milk and cream until smooth and thickened.
  5. Add cheeses and stir until melted. Season with salt and pepper.
  6. Add cooked pasta and BBQ chicken to the cheese sauce and stir to combine.
  7. Optional: Transfer to a baking dish, top with extra cheese, and bake at 375°F (190°C) for 10–12 minutes.
  8. Garnish with parsley or green onions and drizzle extra BBQ sauce on top.

Notes

Use smoked cheddar for a deeper flavor or add crispy bacon for a smoky crunch.
