Ingredients
  

BBQ Chicken Skewers
  • 2 chicken breasts cut into 1-inch cubes
  • 1/2 cup BBQ sauce divided
  • 4-6 wooden skewers soaked in water 30 minutes
Salad
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes halved
  • 1/2 cup cucumber sliced
  • 1/2 cup shredded carrots
  • 1/2 cup corn kernels fresh, canned, or roasted
  • 1 tbsp olive oil
  • salt and pepper
  • sesame seeds or fresh herbs optional garnish

Equipment

  • Mixing bowl
  • Wooden skewers

Method
 

  1. Preheat grill or oven to 400°F. Thread chicken onto soaked skewers and brush with half BBQ sauce.
  2. Grill or bake 12–15 minutes, turning occasionally, brushing with remaining BBQ sauce.
  3. Toss salad greens, cherry tomatoes, cucumber, carrots, and corn with olive oil and salt.
  4. Place cooked skewers on salad. Drizzle with extra BBQ sauce and garnish. Serve immediately.
