Ingredients
  

Salad
  • 2 cans black beans rinsed and drained
  • 1.5 cups corn fresh or canned
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 0.5 red onion chopped
  • 1-2 avocados diced
  • 0.25 cup cilantro chopped
  • 1 lime juiced
  • 1 tsp smoked paprika
  • 0.5 tsp cumin
  • salt and pepper to taste
BBQ Ranch Dressing
  • 0.5 cup ranch dressing
  • 0.25 cup BBQ sauce
  • 1 tbsp lime juice
  • 1-2 tsp honey optional
  • 0.5 tsp garlic powder

Method
 

  1. Combine black beans, corn, tomatoes, bell pepper, and onion in a large bowl.
  2. Add smoked paprika, cumin, salt, pepper, and lime juice. Toss to combine.
  3. Whisk ranch dressing, BBQ sauce, lime juice, honey, and garlic powder together.
  4. Pour dressing over salad ingredients and mix gently.
  5. Fold in avocado and cilantro right before serving.

Notes

Add grilled chicken to turn this into a high-protein meal.
