A layered, cheesy beef enchilada casserole made with seasoned ground beef, tortillas, enchilada sauce, and melted cheese.

Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 2 cups enchilada sauce
  • 10 corn tortillas halved
  • 3 cups shredded cheese Mexican blend

Equipment

  • Large skillet
  • 9x13 baking dish
  • Wooden spoon
  • Aluminum foil

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Brown ground beef with onion and garlic in a skillet.
  3. Season beef and stir in enchilada sauce.
  4. Layer sauce, tortillas, beef, and cheese in baking dish.
  5. Repeat layers and finish with cheese.
  6. Bake covered 20 minutes, uncover and bake 15 minutes more.

Notes

Let casserole rest before slicing for clean layers.
