Ingredients
  

Beef Base
  • 2 lbs beef chuck cut into cubes
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 4 cloves garlic minced
Gravy
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf
Thickening
  • 1 tbsp cornstarch mixed with water
  • 2 tbsp water for slurry
  • 1 tbsp butter optional

Equipment

  • Dutch oven or heavy pot
  • Skillet
  • Cutting board
  • Chef’s knife

Method
 

  1. Pat beef dry and toss lightly in flour, salt, and pepper.
  2. Sear beef in batches in hot oil until browned on all sides, then set aside.
  3. Sauté onions until soft, then add garlic and cook briefly.
  4. Stir in tomato paste and cook for 1–2 minutes.
  5. Add beef broth and Worcestershire sauce, scraping the pot.
  6. Return beef to pot, add herbs and bay leaf, then simmer covered for 1.5–2 hours.
  7. Stir in cornstarch slurry and simmer until gravy thickens.
  8. Finish with butter if desired and serve hot.

Notes

Slow cooking is essential for tender beef. Adjust seasoning and thickness to preference.
