- Pat beef dry and toss lightly in flour, salt, and pepper.
- Sear beef in batches in hot oil until browned on all sides, then set aside.
- Sauté onions until soft, then add garlic and cook briefly.
- Stir in tomato paste and cook for 1–2 minutes.
- Add beef broth and Worcestershire sauce, scraping the pot.
- Return beef to pot, add herbs and bay leaf, then simmer covered for 1.5–2 hours.
- Stir in cornstarch slurry and simmer until gravy thickens.
- Finish with butter if desired and serve hot.
Notes
Slow cooking is essential for tender beef. Adjust seasoning and thickness to preference.
