Ingredients
  

Berry Syrup
  • 2 cups mixed berries fresh or frozen
  • 0.25 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
Mascarpone Cream
  • 1.5 cups mascarpone cheese softened
  • 1 cup heavy cream
  • 0.33 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 lemon zest optional
Assembly
  • 7 oz ladyfingers
  • 2 cups fresh mixed berries for layering and topping
  • 6 mint leaves for garnish

Method
 

  1. Cook berries, sugar, and lemon juice for 5–7 minutes. Stir in vanilla and cool.
  2. Beat mascarpone with sugar and vanilla. Whip cream to soft peaks, then fold into mascarpone.
  3. Dip ladyfingers in berry syrup and layer in dish.
  4. Spread half the mascarpone cream and top with fresh berries. Repeat layers.
  5. Chill for 4 hours or overnight. Garnish with berries and mint before serving.

Notes

Best enjoyed within 2 days for optimal texture.
