Ingredients
  

Tart Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.25 tsp salt
  • 0.5 cup unsalted butter cold and cubed
  • 1 egg yolk
  • 2 tbsp cold water as needed
Pastry Cream
  • 2 cups whole milk
  • 0.5 cup granulated sugar
  • 3 egg yolks
  • 3 tbsp cornstarch
  • 1 tbsp unsalted butter
  • 2 tsp vanilla extract
Fruit Topping
  • 1 cup strawberries sliced
  • 1 cup mandarin oranges segments
  • 1 cup pineapple diced
  • 2 kiwi sliced
  • 0.5 cup blueberries
  • 0.5 cup grapes halved

Equipment

Method
 

  1. Preheat oven to 350°F (175°C). Prepare tart pan.
  2. Mix dry ingredients and cut in butter.
  3. Add egg yolk and water to form dough, press into pan.
  4. Chill 20 minutes, bake 18–22 minutes, cool completely.
  5. Heat milk. Whisk egg yolks, sugar, and cornstarch.
  6. Combine mixtures, cook until thickened, add butter and vanilla.
  7. Cool pastry cream completely.
  8. Fill tart shell, arrange fruit in rainbow pattern, glaze and chill before serving.

Notes

For best freshness, assemble within 6 hours of serving. Use firm fruit and brush with glaze for shine.
