Method
- Preheat oven to 350°F (175°C). Prepare tart pan.
- Mix dry ingredients and cut in butter.
- Add egg yolk and water to form dough, press into pan.
- Chill 20 minutes, bake 18–22 minutes, cool completely.
- Heat milk. Whisk egg yolks, sugar, and cornstarch.
- Combine mixtures, cook until thickened, add butter and vanilla.
- Cool pastry cream completely.
- Fill tart shell, arrange fruit in rainbow pattern, glaze and chill before serving.
Notes
For best freshness, assemble within 6 hours of serving. Use firm fruit and brush with glaze for shine.
