Salad
  • 6 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber sliced
  • 0.5 cup carrots shredded
  • 0.25 cup red onion thinly sliced
Balsamic Vinaigrette
  • 3 tbsp balsamic vinegar
  • 5 tbsp extra virgin olive oil
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic minced
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Wash and dry the romaine lettuce thoroughly, then chop it into bite-sized pieces.
  2. Place lettuce in a large salad bowl.
  3. Add halved cherry tomatoes, sliced cucumber, shredded carrots, and red onion.
  4. In a small bowl or jar whisk together balsamic vinegar, Dijon mustard, honey, garlic, salt, and pepper.
  5. Slowly whisk in olive oil until the dressing emulsifies.
  6. Taste dressing and adjust seasoning if necessary.
  7. Drizzle dressing over the salad just before serving.
  8. Toss gently until vegetables are evenly coated.
  9. Serve immediately for best freshness.
