Carrot Cake Batter
  • 1 cup all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • 0.25 tsp salt
  • 0.5 cup vegetable oil
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup grated carrots
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.25 cup sour cream

Equipment

Method
 

  1. Preheat oven to 325°F and prepare a springform pan.
  2. Mix dry ingredients for carrot cake batter.
  3. Combine wet ingredients and fold in carrots.
  4. Prepare cheesecake batter until smooth.
  5. Layer and swirl batters in pan.
  6. Bake using water bath for 55–65 minutes.
  7. Cool gradually, then refrigerate at least 4 hours.
