Black Bean Flautas

Crispy rolled tortillas filled with seasoned black beans, baked or fried to golden perfection.

Ingredients
  

Filling
  • 2 cups black beans cooked
  • 0.5 onion chopped
  • 2 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
  • 0.5 cup cheese optional
Assembly
  • 10 tortillas small
  • 3 tbsp olive oil

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Sauté onion until soft, then add garlic and cook briefly.
  2. Add black beans and spices, mash slightly and cook until combined.
  3. Stir in cheese if using and remove from heat.
  4. Fill tortillas with mixture and roll tightly.
  5. Brush with oil and place seam-side down.
  6. Bake at 400°F for 15–20 minutes or fry until golden.
  7. Serve hot with toppings of choice.

Notes

Warm tortillas before rolling to prevent cracking.
