Ingredients
  

Shortbread Cookies
  • 1 cup unsalted butter softened
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.25 tsp salt
Blackberry Glaze
  • 1 cup fresh blackberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 0.75 cup powdered sugar

Method
 

  1. Preheat oven to 325°F (165°C) and line baking sheets with parchment paper.
  2. Cream butter and powdered sugar until light and smooth. Mix in vanilla.
  3. Add flour and salt, mixing just until dough forms.
  4. Roll dough to ½-inch thickness, cut shapes, and place on baking sheets.
  5. Bake 14–16 minutes until edges are lightly golden. Cool completely.
  6. Simmer blackberries, sugar, and lemon juice until berries break down.
  7. Strain juice and whisk with powdered sugar to form glaze.
  8. Drizzle glaze over cooled cookies and allow to set before serving.

Notes

Glaze thickness can be adjusted by adding more or less blackberry juice.
