Method
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix blackberries, sugar, cornstarch, lemon zest, vanilla, and thyme in a bowl.
- Cut puff pastry into equal squares and score a border around each.
- Spoon filling into the center of each pastry.
- Brush edges with egg wash.
- Bake for 18–22 minutes until golden and bubbly.
- Cool slightly before serving.
Notes
Best served warm or at room temperature. Store leftovers refrigerated for up to 2 days.
