Ingredients
  

Pastry Base
  • 2 sheets puff pastry thawed
Filling
  • 2 cups fresh blackberries
  • 0.33 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp lemon zest
  • 1 tsp fresh thyme finely chopped
  • 1 tsp vanilla extract
  • 1 egg beaten, for egg wash

Equipment

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mix blackberries, sugar, cornstarch, lemon zest, vanilla, and thyme in a bowl.
  3. Cut puff pastry into equal squares and score a border around each.
  4. Spoon filling into the center of each pastry.
  5. Brush edges with egg wash.
  6. Bake for 18–22 minutes until golden and bubbly.
  7. Cool slightly before serving.

Notes

Best served warm or at room temperature. Store leftovers refrigerated for up to 2 days.
