Ingredients
  

  • 2 sheets puff pastry thawed if frozen
  • 0.75 cup blue cheese crumbled
  • 0.5 cup walnuts chopped and toasted
  • 2 tsp fresh thyme leaves plus extra for garnish
  • 1 egg beaten for egg wash
  • 1 tbsp honey or olive oil optional drizzle
  • black pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Combine blue cheese, walnuts, thyme, and black pepper in a small bowl.
  3. Lay one sheet of puff pastry on parchment. Spread filling evenly, leaving ½-inch border.
  4. Place the second pastry sheet on top, press edges to seal.
  5. Mark a small circle in the center with a glass. Cut 16 strips from the center outward and twist each one twice.
  6. Brush pastry with egg wash and bake 20–25 minutes until golden.
  7. Drizzle with honey or olive oil, sprinkle thyme, and serve warm.

Notes

Best served warm. You can add caramelized onions or honey drizzle for variation.
