Ingredients
  

Donut Batter
  • 2 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 2 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 1 egg large
  • 0.75 cup buttermilk
  • 0.25 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1 cup blueberries fresh or frozen
Blueberry Glaze
  • 0.5 cup blueberries fresh
  • 1.5 cups powdered sugar
  • 1 tsp lemon juice
  • 0.5 tsp vanilla extract
  • 2 tbsp milk as needed

Method
 

  1. Preheat oven to 350°F (175°C) and grease a donut pan.
  2. Whisk flour, sugar, baking powder, baking soda, and salt in a bowl.
  3. Mix egg, buttermilk, butter, and vanilla in another bowl.
  4. Combine wet and dry ingredients; fold in blueberries.
  5. Spoon batter into donut pan cavities, filling ¾ full.
  6. Bake 12–15 minutes or until golden; cool on wire rack.
  7. Cook blueberries for glaze until soft; strain to get juice.
  8. Whisk juice with powdered sugar, lemon juice, vanilla, and milk.
  9. Dip cooled donuts into glaze; let set before serving.

Notes

For deeper flavor, add lemon zest or use wild blueberries.
