Ingredients
  

Batter
  • 1 cup all-purpose flour
  • 0.5 cup sugar
  • 1 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 1 tbsp dried lavender culinary
  • 0.5 cup plant-based milk
  • 0.33 cup vegan butter melted
  • 1 tsp vanilla extract
  • 1 tsp lemon zest
  • 0.75 cup blueberries

Equipment

  • Mixing bowls
  • Madeleine pan
  • Wire rack
  • Hand mixer or whisk

Method
 

  1. Preheat oven to 350°F (175°C) and grease madeleine pan.
  2. Mix dry ingredients in one bowl.
  3. Combine wet ingredients in another bowl.
  4. Mix wet and dry ingredients until smooth.
  5. Fold in blueberries.
  6. Fill molds and bake 12–15 minutes.
  7. Cool on rack and glaze if desired.

Notes

Use culinary lavender and avoid overmixing for best texture.
