Ingredients
  

Custard Filling
  • 1 cup milk
  • 2 tbsp cornstarch
  • 0.25 cup sugar
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 tbsp butter
Cookies
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.5 cup sugar
  • 1 egg
  • 2 tsp vanilla extract
  • 2 tbsp milk
Chocolate Ganache
  • 1 cup chocolate chips
  • 0.25 cup heavy cream

Method
 

  1. Whisk milk, cornstarch, sugar, and egg yolk in a saucepan.
  2. Cook until thickened, then stir in vanilla and butter. Chill completely.
  3. Cream butter and sugar; add egg, vanilla, and milk.
  4. Mix dry ingredients and combine with wet ingredients.
  5. Scoop dough, flatten slightly, and indent centers.
  6. Bake at 350°F for 9–11 minutes. Cool completely.
  7. Make ganache by mixing hot cream with chocolate chips.
  8. Fill cookies with custard and top with chocolate ganache.

Notes

Best served chilled. Make custard ahead for easier assembly.
