Method
- Whisk milk, cornstarch, sugar, and egg yolk in a saucepan.
- Cook until thickened, then stir in vanilla and butter. Chill completely.
- Cream butter and sugar; add egg, vanilla, and milk.
- Mix dry ingredients and combine with wet ingredients.
- Scoop dough, flatten slightly, and indent centers.
- Bake at 350°F for 9–11 minutes. Cool completely.
- Make ganache by mixing hot cream with chocolate chips.
- Fill cookies with custard and top with chocolate ganache.
Notes
Best served chilled. Make custard ahead for easier assembly.
