Ingredients
  

  • 2 lbs boneless, skinless chicken thighs cut into chunks
  • 0.5 cup soy sauce
  • 0.25 cup bourbon or apple juice
  • 0.5 cup brown sugar packed
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 3 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 0.25 tsp red pepper flakes optional
  • 1 tbsp cornstarch
  • 2 tbsp water for slurry
  • 2 green onions sliced, for garnish

Method
 

  1. Cut chicken thighs into chunks and place in crock pot.
  2. Whisk soy sauce, bourbon, brown sugar, ketchup, vinegar, garlic, ginger, and red pepper flakes in a bowl.
  3. Pour sauce over chicken and stir to coat evenly.
  4. Cook on low for 6 hours or high for 3 hours.
  5. Mix cornstarch and water; stir into crock pot during last 15 minutes to thicken sauce.
  6. Garnish with green onions and serve hot over rice.

Notes

For a non-alcoholic version, replace bourbon with apple juice or broth.
