- In a medium saucepan, combine peaches, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until peaches soften and sugar dissolves (about 10 minutes).
- Mash the peaches gently with a spoon or potato masher until you reach your desired jam consistency.
- Stir in bourbon and continue to cook for another 5–7 minutes until the jam thickens slightly.
- Remove from heat and stir in vanilla extract. Let cool slightly before transferring to sterilized jars.
- Seal jars and refrigerate. Jam can be stored in the fridge for up to 3 weeks or processed in a water bath for longer shelf life.
