Ingredients
  

  • 4 cups fresh peaches peeled and chopped
  • 2 cups granulated sugar
  • 2 tbsp lemon juice freshly squeezed
  • 1/4 cup bourbon
  • 1/2 tsp vanilla extract

Method
 

  1. In a medium saucepan, combine peaches, sugar, and lemon juice. Cook over medium heat, stirring occasionally, until peaches soften and sugar dissolves (about 10 minutes).
  2. Mash the peaches gently with a spoon or potato masher until you reach your desired jam consistency.
  3. Stir in bourbon and continue to cook for another 5–7 minutes until the jam thickens slightly.
  4. Remove from heat and stir in vanilla extract. Let cool slightly before transferring to sterilized jars.
  5. Seal jars and refrigerate. Jam can be stored in the fridge for up to 3 weeks or processed in a water bath for longer shelf life.
