  • 0.25 cup chia seeds
  • 1 cup almond milk or milk of choice
  • 0.5 cup Greek yogurt
  • 2 tbsp honey or maple syrup
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 0.5 tsp vanilla extract
  • 1 pinch salt

Method
 

  1. Whisk almond milk, Greek yogurt, honey, lemon juice, vanilla, and salt in a mixing bowl.
  2. Stir in lemon zest.
  3. Add chia seeds while whisking to prevent clumps.
  4. Let mixture sit 5 minutes, then whisk again.
  5. Transfer to jars or bowls.
  6. Cover and refrigerate for at least 2 hours or overnight.
  7. Stir before serving and add toppings as desired.
