Ingredients
  

Brown Butter Mushroom Pasta
  • 10 oz spaghetti or fettuccine
  • 8 oz mushrooms, sliced cremini or baby bella
  • 4 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup Parmesan cheese grated
  • 2 tbsp fresh parsley chopped
  • 0.5 tsp lemon juice optional

  • Saucepan
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain.
  2. In a skillet, melt butter and cook until golden brown and nutty in aroma.
  3. Add olive oil and sliced mushrooms. Cook until golden and caramelized.
  4. Add minced garlic, salt, and pepper. Cook for 1 minute until fragrant.
  5. Add cooked pasta and a splash of reserved water. Toss to coat evenly.
  6. Remove from heat, stir in Parmesan, parsley, and lemon juice.
  7. Serve immediately, topped with extra cheese and black pepper.

Notes

Mix mushrooms for best flavor; cremini, shiitake, and oyster work great together.
