Cheesy, spicy, and utterly addictive, these Buffalo Chicken Bacon Mozzarella Bombs are the ultimate game-day or party snack. Soft dough stuffed with buffalo chicken, smoky bacon, and gooey mozzarella.

Ingredients
  

  • 2 cups cooked shredded chicken rotisserie chicken works great
  • 1/2 cup buffalo sauce your favorite brand
  • 8 slices bacon cooked & crumbled
  • 16 cubes mozzarella cheese about 1-inch each
  • 2 cans refrigerated biscuit or pizza dough 8 pieces each
  • 3 tbsp butter melted
  • 2 cloves garlic minced
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine shredded chicken with buffalo sauce until well coated.
  3. Flatten a piece of dough, place 1 spoonful of buffalo chicken, a sprinkle of bacon, and 1 cube of mozzarella in the center.
  4. Fold dough around filling, pinch edges tightly to seal, and roll into a ball. Place seam-side down on prepared sheet. Repeat with remaining dough.
  5. Mix melted butter with minced garlic. Brush over tops of dough balls.
  6. Bake 18–20 minutes or until golden brown. Sprinkle with fresh parsley before serving.

Notes

Serve warm with ranch dressing or extra buffalo sauce for dipping. For extra spice, add diced jalapeños to the filling.
