- In a bowl, mix chicken, buffalo sauce, cream cheese, mozzarella, blue cheese, and green onions until creamy.
- Place 2 tablespoons of filling onto an egg roll wrapper and roll tightly, sealing with beaten egg.
- Heat oil in a skillet to 350°F (175°C). Fry egg rolls 2–3 minutes per side until golden.
- Drain on paper towels and serve hot with ranch or blue cheese dressing.
Notes
For a lighter option, bake at 400°F (200°C) for 15–18 minutes, flipping halfway.
