Ingredients
  

Filling
  • 2 cups shredded cooked chicken
  • 0.5 cup buffalo sauce
  • 0.5 cup cream cheese softened
  • 0.5 cup shredded mozzarella cheese
  • 0.25 cup blue cheese crumbles optional
  • 0.25 cup chopped green onions
  • to taste salt and black pepper
Assembly
  • 12 egg roll wrappers
  • 1 egg lightly beaten for sealing
  • oil for frying vegetable or canola

Method
 

  1. In a bowl, mix chicken, buffalo sauce, cream cheese, mozzarella, blue cheese, and green onions until creamy.
  2. Place 2 tablespoons of filling onto an egg roll wrapper and roll tightly, sealing with beaten egg.
  3. Heat oil in a skillet to 350°F (175°C). Fry egg rolls 2–3 minutes per side until golden.
  4. Drain on paper towels and serve hot with ranch or blue cheese dressing.

Notes

For a lighter option, bake at 400°F (200°C) for 15–18 minutes, flipping halfway.
