Ingredients
  

Chicken Meatballs
  • 1 lb ground chicken
  • 0.5 cup breadcrumbs panko preferred
  • 1 egg large
  • 2 cloves garlic minced
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 tbsp milk
Buffalo Sauce
  • 0.5 cup hot sauce
  • 0.25 cup butter melted
  • 1 tbsp honey optional
  • 1 tsp garlic powder
  • 1 tsp white vinegar

Method
 

  1. Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  2. Mix ground chicken, breadcrumbs, egg, garlic, spices, and milk until just combined.
  3. Form mixture into 1–1.5 inch meatballs and place on baking sheet.
  4. Bake for 18–20 minutes until fully cooked and golden.
  5. Whisk buffalo sauce ingredients in a saucepan over low heat until smooth.
  6. Toss cooked meatballs in buffalo sauce until fully coated.
  7. Serve hot with ranch or blue cheese and celery sticks.

Notes

Do not overmix chicken mixture. Adjust spice level by increasing or reducing hot sauce.
