  • 1 box Mochiko flour (16 oz)
  • 2 cups Sugar
  • 4 large Eggs
  • 1/2 cup Unsalted butter, melted
  • 1 can Coconut milk (13.5 oz)
  • 1 can Evaporated milk
  • 2 tsp Baking powder
  • 1 tsp Vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch pan.
  2. In a bowl, whisk together eggs, melted butter, coconut milk, evaporated milk, and vanilla.
  3. Add mochiko flour, sugar, baking powder, and salt. Mix until smooth.
  4. Pour batter into the pan and bake for 50–60 minutes until golden brown.
  5. Cool completely before slicing into squares.

Notes

Store at room temperature for 1 day, or refrigerate up to 3 days. Reheat for best texture.
