- In a mixing bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until foamy.
- Stir in flour, salt, and melted butter. Knead until smooth and elastic (about 6–8 minutes).
- Place dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
- Preheat oven to 425°F (220°C). Line baking sheets with parchment paper.
- Bring 10 cups of water and baking soda to a boil in a large pot.
- Punch down dough and divide into 6 equal portions. Roll each into ropes and cut into 1-inch pieces.
- Boil pretzel bites in batches for 30 seconds, then remove with a slotted spoon.
- Arrange bites on baking sheets, brush with melted butter, and sprinkle with coarse salt.
- Bake for 12–15 minutes, until deep golden brown.
- Brush with more melted butter after baking for that extra soft, buttery finish.
Notes
These pretzel bites are best enjoyed warm. Store leftovers in an airtight container and reheat briefly in the oven or air fryer.
