Ingredients
  

Cajun Chicken Filling
  • 1.5 lb chicken breast diced
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 cup onion chopped
  • 1 cup bell peppers diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 0.75 cup chicken broth
Creamy Cheese Sauce
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1.5 cups whole milk
  • 1.5 cups cheddar cheese shredded

Method
 

  1. Cook seasoned chicken in olive oil until browned and cooked through; remove and set aside.
  2. Sauté onions and peppers in the same skillet until softened.
  3. Add garlic, tomato paste, and spices; cook briefly.
  4. Add broth and return chicken; simmer until thick.
  5. Make cheese sauce by whisking butter, flour, milk, and cheese until smooth.
  6. Assemble sloppy joes on toasted buns with cheese sauce.

Adjust Cajun seasoning based on heat preference.
