Method
- Cook pasta until al dente and set aside.
- Brown Andouille sausage slices in olive oil; remove and set aside.
- In a skillet, make a roux with butter and flour, whisking for 1–2 minutes.
- Gradually whisk in milk and cream until thickened.
- Add Cajun seasoning, smoked paprika, garlic powder, salt, and pepper.
- Remove from heat; stir in all cheeses until melted.
- Combine pasta, sausage, and cheese sauce.
- Transfer to baking dish, top with breadcrumb mixture, and bake 15–20 minutes.
- Garnish with parsley before serving.
Notes
For extra spice, add a pinch of cayenne or hot sauce to the cheese sauce.
