Method
- Cook rigatoni in salted water until al dente; drain and reserve 1/2 cup pasta water.
- Season steak with Cajun spice, salt, and pepper. Heat oil in a skillet and sear steak 3–4 minutes per side. Rest before slicing.
- In the same pan, melt butter, sauté garlic, and stir in cream and milk.
- Add Parmesan, mozzarella, and Cajun seasoning. Stir until smooth.
- Toss rigatoni with sauce; add pasta water as needed.
- Add sliced steak to pasta and toss together. Garnish with parsley and Parmesan.
Notes
For extra heat, add cayenne pepper or serve with hot sauce.
