Cajun Steak Tips
  • 1 lb sirloin steak cut into 1-inch cubes
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • 0.5 tsp salt
Cheesy Rigatoni Parmesan Sauce
  • 12 oz rigatoni pasta
  • 3 tbsp butter
  • 5 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1.25 cups parmesan cheese freshly grated
  • 1 tsp Cajun seasoning for sauce
  • 0.5 tsp smoked paprika
  • 0.5 tsp black pepper
  • 0.25 cup pasta water reserved
  • 0.25 cup parsley chopped, for garnish

Equipment

Method
 

  1. Cook rigatoni until al dente and reserve pasta water.
  2. Season steak with Cajun seasoning, salt, and pepper.
  3. Sear steak tips in a hot skillet until browned; remove and set aside.
  4. Melt butter in the skillet and sauté garlic for 1 minute.
  5. Add cream, milk, parmesan, Cajun seasoning, paprika, and pepper.
  6. Simmer until thickened, adding pasta water as needed.
  7. Add rigatoni to sauce and toss to coat.
  8. Return steak tips to the skillet and mix until warmed through.
  9. Garnish with parsley and serve.

Notes

Use freshly grated parmesan for the creamiest sauce.
