Ingredients
  

Graham Cracker Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 0.5 cup unsalted butter melted
Custard Filling
  • 2 cups whole milk
  • 0.5 cup granulated sugar
  • 3 tbsp cornstarch
  • 3 egg yolks
  • 1 tbsp unsalted butter
  • 2 tsp vanilla extract
Meringue Topping
  • 3 egg whites
  • 0.25 cup granulated sugar
  • 0.25 tsp cream of tartar

Equipment

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into pie plate and bake 10 minutes.
  3. Whisk sugar and cornstarch in saucepan, slowly add milk, and cook until thickened.
  4. Temper egg yolks, return to pan, cook briefly, then stir in butter and vanilla.
  5. Pour custard into crust.
  6. Beat egg whites with cream of tartar, add sugar until stiff peaks form.
  7. Spread meringue over custard and bake until lightly golden.

Notes

Cool completely before refrigerating for best texture.
