Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.25 cup granulated sugar
  • 6 tbsp unsalted butter melted
Cheesecake Layer
  • 16 oz cream cheese softened
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla extract
  • 0.5 tsp ground cinnamon
Apple Topping
  • 2 medium apples peeled, cored, diced
  • 2 tbsp brown sugar
  • 0.5 tsp ground cinnamon
  • 0.25 tsp nutmeg
  • 1 tbsp lemon juice
Caramel Drizzle
  • 0.5 cup caramel sauce homemade or store-bought

Method
 

  1. Preheat oven to 350°F (175°C) and line a 9x9-inch pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter; press into pan and bake 8–10 minutes.
  3. Beat cream cheese, sugar, eggs, vanilla, and cinnamon until smooth; pour over crust.
  4. Toss diced apples with brown sugar, cinnamon, nutmeg, and lemon juice; layer over cheesecake.
  5. Bake 35–40 minutes until cheesecake is set; cool to room temperature.
  6. Drizzle caramel sauce over cooled bars and refrigerate at least 2 hours before slicing.

Notes

Bars can be made a day ahead and stored in the fridge; optional nuts add crunch.
