Method
- Preheat oven to 350°F (175°C) and line a 9x9-inch pan with parchment paper.
- Combine graham cracker crumbs, sugar, and melted butter; press into pan and bake 8–10 minutes.
- Beat cream cheese, sugar, eggs, vanilla, and cinnamon until smooth; pour over crust.
- Toss diced apples with brown sugar, cinnamon, nutmeg, and lemon juice; layer over cheesecake.
- Bake 35–40 minutes until cheesecake is set; cool to room temperature.
- Drizzle caramel sauce over cooled bars and refrigerate at least 2 hours before slicing.
Notes
Bars can be made a day ahead and stored in the fridge; optional nuts add crunch.
