  • 12 oz pasta
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1 green cabbage sliced
  • 3 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp red pepper flakes optional
  • 0.5 cup parmesan cheese grated
  • 0.25 cup pasta water reserved

Equipment

  • Skillet
  • Colander
  • Wooden spoon

Method
 

  1. Cook pasta in salted water until al dente. Reserve pasta water and drain.
  2. Heat olive oil and butter in a skillet over medium heat.
  3. Add cabbage and cook slowly, stirring occasionally, until caramelized.
  4. Add garlic and cook until fragrant.
  5. Season with salt, pepper, and red pepper flakes.
  6. Add pasta and toss with cabbage mixture.
  7. Add butter and pasta water, tossing until coated.
  8. Stir in parmesan and serve warm.

Notes

Cook cabbage slowly for best caramelization and flavor.
