Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cook onions in butter, olive oil, sugar, salt, and pepper over medium-low heat for 25–35 minutes until caramelized.
- Roll out puff pastry and cut into squares. Score a border around each piece.
- Mix goat cheese with cream and thyme until smooth.
- Spread goat cheese inside borders and top with caramelized onions.
- Brush edges with egg wash.
- Bake 15–20 minutes until golden and puffed.
- Garnish with thyme and serve warm.
Notes
You can prepare caramelized onions ahead of time and store in the refrigerator up to 3 days.
