Ingredients
  

Tart Base
  • 1 sheet puff pastry thawed
Caramelized Onions
  • 3 large yellow onions thinly sliced
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Filling
  • 4 oz goat cheese softened
  • 2 tbsp heavy cream
  • 1 tsp fresh thyme
  • 1 tsp balsamic vinegar optional
Egg Wash
  • 1 egg
  • 1 tbsp water

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cook onions in butter, olive oil, sugar, salt, and pepper over medium-low heat for 25–35 minutes until caramelized.
  3. Roll out puff pastry and cut into squares. Score a border around each piece.
  4. Mix goat cheese with cream and thyme until smooth.
  5. Spread goat cheese inside borders and top with caramelized onions.
  6. Brush edges with egg wash.
  7. Bake 15–20 minutes until golden and puffed.
  8. Garnish with thyme and serve warm.

Notes

You can prepare caramelized onions ahead of time and store in the refrigerator up to 3 days.
