Bread Pudding
  • 5 cups brioche or challah bread cubed, day-old
  • 2 pears peeled, cored, sliced
  • 3 eggs large
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 0.75 cup granulated sugar
  • 2 tbsp unsalted butter melted
  • 1 tsp ground cardamom
  • 0.5 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 orange zest from 1 orange
Orange Caramel Sauce
  • 1 cup granulated sugar
  • 4 tbsp unsalted butter
  • 0.5 cup heavy cream
  • 1 orange zest from 1 orange
  • 2 tbsp orange juice fresh

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Arrange bread cubes and pear slices evenly in the baking dish.
  3. Whisk eggs, milk, cream, sugar, butter, spices, vanilla, and orange zest.
  4. Pour custard over bread and pears; let soak 15–20 minutes.
  5. Bake 40–45 minutes until golden and set.
  6. Prepare caramel by melting sugar, then adding butter, cream, orange zest, and juice.
  7. Serve bread pudding warm with orange caramel sauce.
