Ingredients
  

  • 1.5 lbs flank or skirt steak
  • 3 cloves garlic minced
  • 2 limes juiced
  • 1 orange juiced
  • 1/4 cup olive oil
  • 1/4 cup fresh cilantro chopped
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • salt and black pepper to taste
  • 2 cups cooked cilantro-lime rice
  • 1 can black beans 15 oz, drained and rinsed
  • 1 cup charred corn kernels
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • salsa or pico de gallo for topping
  • lime wedges for serving
  • optional toppings sour cream, queso fresco, jalapeños

Equipment

Method
 

  1. In a mixing bowl, whisk lime juice, orange juice, olive oil, garlic, cilantro, and spices. Add steak and marinate for at least 2 hours or overnight.
  2. Heat grill or skillet to medium-high heat. Cook steak 4–5 minutes per side for medium-rare or until desired doneness. Rest 5 minutes, then slice thinly against the grain.
  3. Prepare rice and toss with lime juice and chopped cilantro.
  4. Assemble bowls with rice, beans, corn, tomatoes, avocado, and sliced steak.
  5. Top with salsa and garnish with lime wedges and cilantro. Serve warm.

Notes

Marinate steak overnight for best flavor. Customize bowls with your favorite toppings like roasted peppers, jalapeños, or queso fresco.
