Ingredients
  

Energy Ball Mixture
  • 1 cup rolled oats
  • 0.75 cup grated carrots finely grated
  • 1 cup Medjool dates pitted
  • 0.5 cup walnuts
  • 0.25 cup unsweetened shredded coconut
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 1 tbsp chia seeds
  • 1 pinch salt
Coating
  • 0.25 cup shredded coconut for rolling
  • 0.25 cup crushed walnuts optional

Method
 

  1. Finely grate the carrots and set aside.
  2. Add walnuts to a food processor and pulse until finely chopped.
  3. Add oats, coconut, chia seeds, cinnamon, nutmeg, and salt. Pulse to combine.
  4. Add dates, carrots, maple syrup, and vanilla extract.
  5. Blend until the mixture becomes sticky and holds together when pressed.
  6. Roll mixture into bite-sized balls using about 1 tablespoon per ball.
  7. Roll energy balls in shredded coconut or crushed walnuts if desired.
  8. Refrigerate for 30 minutes before serving for best texture.

Notes

For softer energy balls, allow dates to soak in warm water for 10 minutes before blending. Store refrigerated for up to 1 week.
