Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Rice cauliflower using a food processor until fine and grain-like.
- Cook cauliflower rice in microwave or steam until soft, then cool.
- Squeeze out all excess moisture using a clean kitchen towel.
- Mix cauliflower with egg, mozzarella, parmesan, and seasonings.
- Spread mixture into a round crust shape on baking sheet.
- Bake for 15–20 minutes until golden and firm.
- Add toppings and bake again for 8–10 minutes before serving.
Notes
Remove as much moisture as possible for a crisp crust. Bake twice for best structure.
