Cabbage Wedges
  • 1 large green cabbage cut into thick wedges
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp chili flakes optional
Creamy Garlic Sauce
  • 1 cup Greek yogurt or sour cream
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • 2 tbsp olive oil or mayo
  • salt to taste
  • 1 tbsp fresh dill or parsley optional

Method
 

  1. Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Cut cabbage into thick wedges, keeping the core intact to hold shape.
  3. Mix olive oil, smoked paprika, garlic powder, salt, pepper, and chili flakes in a bowl.
  4. Coat cabbage wedges evenly with seasoning mixture.
  5. Arrange wedges on baking sheet and roast for 20–25 minutes, flipping halfway.
  6. Whisk together Greek yogurt, garlic, lemon juice, olive oil, and salt to make sauce.
  7. Remove cabbage from oven once charred and tender.
  8. Drizzle with creamy garlic sauce, garnish, and serve warm.

Notes

For extra char flavor, place cabbage under broiler for 1–2 minutes at the end of roasting.
