- Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
- Cut cabbage into thick wedges, keeping the core intact to hold shape.
- Mix olive oil, smoked paprika, garlic powder, salt, pepper, and chili flakes in a bowl.
- Coat cabbage wedges evenly with seasoning mixture.
- Arrange wedges on baking sheet and roast for 20–25 minutes, flipping halfway.
- Whisk together Greek yogurt, garlic, lemon juice, olive oil, and salt to make sauce.
- Remove cabbage from oven once charred and tender.
- Drizzle with creamy garlic sauce, garnish, and serve warm.
Notes
For extra char flavor, place cabbage under broiler for 1–2 minutes at the end of roasting.
