Ingredients
  

Seafood Filling
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 1 cup onion, celery, and carrot mix diced
  • 3 tbsp all-purpose flour
  • 1.5 cups seafood stock
  • 1 cup milk or half-and-half
  • 1 lb mixed seafood shrimp, scallops, crab
Biscuit Topping
  • 2 cups biscuit mix
  • 1 cup cheddar cheese shredded
  • 0.75 cup milk

Method
 

  1. Preheat oven to 375°F (190°C) and prepare baking dishes.
  2. Cook vegetables in butter and oil until softened.
  3. Stir in flour, then whisk in stock and milk to form sauce.
  4. Fold in seafood and seasonings, then transfer to baking dish.
  5. Prepare biscuit topping and spoon over filling.
  6. Bake until biscuits are golden and filling is bubbling.
