  • 1 lb ground beef
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 cups elbow macaroni uncooked
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
  • 3 cups beef broth
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp chili powder optional
  • 2 cups shredded cheddar cheese divided
  • 1 tbsp olive oil
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Stir in onion and garlic, cooking until softened.
  3. Add diced tomatoes, tomato paste, and seasonings. Mix well.
  4. Pour in beef broth and add macaroni. Stir, bring to a boil, then reduce heat and simmer for 10–12 minutes until pasta is tender.
  5. Stir in 1½ cups cheddar cheese until melted.
  6. Top with remaining cheese, cover for 2 minutes, and garnish with parsley before serving.

Notes

This dish reheats beautifully — add a splash of broth or milk to refresh leftovers.
