- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon.
- Stir in onion and garlic, cooking until softened.
- Add diced tomatoes, tomato paste, and seasonings. Mix well.
- Pour in beef broth and add macaroni. Stir, bring to a boil, then reduce heat and simmer for 10–12 minutes until pasta is tender.
- Stir in 1½ cups cheddar cheese until melted.
- Top with remaining cheese, cover for 2 minutes, and garnish with parsley before serving.
