  • 3 cups sweet corn kernels
  • 1 cup shredded cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 0.5 cup sour cream
  • 0.5 cup whole milk
  • 0.25 cup unsalted butter melted
  • 2 eggs large
  • 0.33 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 350°F (175°C) and grease a baking dish.
  2. Whisk eggs, sour cream, milk, and melted butter in a large bowl.
  3. Stir in flour, sugar, baking powder, salt, and pepper until smooth.
  4. Fold in corn and shredded cheeses.
  5. Pour mixture into baking dish and smooth the top.
  6. Bake 40–45 minutes until set and golden.
  7. Cool slightly before serving.

Resting the casserole before serving helps it set and improves texture.
