- Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
- Cook sausage in a skillet until browned. Drain and set aside.
- Sauté onion and peppers in olive oil until softened.
- Whisk eggs, milk, and seasonings in a large bowl.
- Stir in sausage, vegetables, and 1 cup cheese.
- Pour into dish, top with remaining cheese.
- Bake 30–35 minutes until set and golden.
- Cool 5 minutes, garnish, and serve.
