Rice Bake
  • 2 tbsp butter
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp thyme
  • 1 cup long-grain white rice uncooked
  • 2 cups beef broth
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp Worcestershire sauce optional
  • 1 cup Gruyère cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 2 tbsp parsley chopped

Method
 

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. Melt butter in a skillet and cook sliced onions until deeply caramelized.
  3. Add garlic and thyme and cook until fragrant.
  4. Stir in rice, broth, salt, pepper, and Worcestershire sauce.
  5. Transfer mixture to baking dish, cover with foil, and bake 30–35 minutes.
  6. Remove foil, add cheeses on top, and bake another 10–15 minutes until melted.
  7. Broil briefly for golden top if desired, garnish with parsley, and serve.

Notes

Use vegetable broth for a vegetarian version. Brown rice requires longer cooking time and extra liquid.
