Ingredients
  

Casserole
  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 1 small onion diced
  • 2 cloves garlic minced
  • 10.5 oz cream of mushroom soup 1 can
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika optional
  • 1 tbsp olive oil or butter for sautéing

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch casserole dish.
  2. In a skillet, heat olive oil over medium heat. Sauté onion and garlic until translucent, then add ground beef and cook until browned. Drain excess fat.
  3. In a large bowl, combine uncooked rice, cream of mushroom soup, beef broth, salt, pepper, and paprika. Fold in cooked beef mixture.
  4. Transfer mixture to the greased casserole dish and spread evenly. Top with shredded cheddar cheese.
  5. Cover with foil and bake 40 minutes. Remove foil and bake 10–15 more minutes until cheese is melted and bubbly.
  6. Serve hot, garnished with parsley if desired.

Notes

Optional vegetables can be added. Store leftovers in an airtight container for up to 4 days.
