Method
- Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
- Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add onion, bell pepper, and garlic. Cook 5 minutes until softened.
- Stir in paprika, oregano, salt, and pepper.
- Add uncooked rice and diced tomatoes. Mix evenly.
- Pour in beef broth, stir, and simmer 2–3 minutes.
- Transfer mixture to casserole dish. Sprinkle cheeses on top.
- Cover with foil and bake 25 minutes. Remove foil and bake 10 minutes until cheese is melted and golden.
- Let rest 5 minutes, garnish with parsley, and serve.
Notes
Pre-rinse rice to prevent sticking. Use a mix of cheddar and mozzarella for best melt and flavor.
