Ingredients
  

  • 1 lb ground beef
  • 1 cup long-grain white rice
  • 1 onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 15 oz
  • 1 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • salt and pepper to taste
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  2. Cook ground beef in a skillet over medium heat until browned. Drain excess fat.
  3. Add onion, bell pepper, and garlic. Cook 5 minutes until softened.
  4. Stir in paprika, oregano, salt, and pepper.
  5. Add uncooked rice and diced tomatoes. Mix evenly.
  6. Pour in beef broth, stir, and simmer 2–3 minutes.
  7. Transfer mixture to casserole dish. Sprinkle cheeses on top.
  8. Cover with foil and bake 25 minutes. Remove foil and bake 10 minutes until cheese is melted and golden.
  9. Let rest 5 minutes, garnish with parsley, and serve.

Notes

Pre-rinse rice to prevent sticking. Use a mix of cheddar and mozzarella for best melt and flavor.
