Ingredients
  

Cheese
  • 2 cups shredded mozzarella
  • 1/2 cup grated Parmesan
Coating
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 cup breadcrumbs seasoned
Seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Cut mozzarella into bite-sized cubes.
  2. Set up a dredging station: flour in one bowl, beaten eggs in another, breadcrumbs mixed with Parmesan and seasonings in a third.
  3. Coat each cheese cube in flour, dip in egg, and roll in breadcrumb mixture. Press gently to adhere. For extra crunch, double coat.
  4. Bake: Preheat oven to 400°F (200°C). Place coated bites on parchment-lined baking sheet. Lightly spray with oil and bake 8–12 minutes until golden.
  5. Or Fry: Heat oil to 350°F (175°C). Fry bites in batches 2–3 minutes until golden. Drain on paper towels.
  6. Let bites cool 1–2 minutes. Serve hot with marinara, ranch, or aioli.

Notes

Freeze coated bites for 10–15 minutes before cooking to prevent cheese leaks. Double coating ensures extra crispiness. Store leftovers in airtight container in fridge for up to 2 days.
