Dough
  • 3.75 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 1.5 cups warm water
  • 1 tbsp sugar
  • 1 tsp salt
  • 2 tbsp unsalted butter melted
Filling
  • 1.5 cups shredded mozzarella cheese
  • 2 tbsp fresh rosemary chopped
Bath
  • 8 cups water
  • 0.5 cup baking soda
Topping
  • 1 egg beaten
  • coarse salt
  • 1 tbsp butter melted

Method
 

  1. Activate yeast in warm water with sugar until foamy.
  2. Mix in flour, salt, and butter to form dough. Knead until smooth.
  3. Let dough rise until doubled in size.
  4. Mix cheese and rosemary for filling.
  5. Shape dough, fill with cheese mixture, and seal.
  6. Dip pretzels in baking soda bath.
  7. Brush with egg wash and sprinkle salt.
  8. Bake until golden brown and brush with butter before serving.

Notes

Ensure pretzels are well sealed to keep cheese from leaking. Best served warm.
